According to "Altconsumero" (magazine of an independent consumer protection association in Italy) espresso served in coffee bars using Costadoro coffes is the best one, because of its olfactory, gustative and aftertaste qualities.

Below you have a piece of information concerning the process of coffee production: roasting, beans selection, coffee blending and packing.

Step 1: Raw coffee purchase

Coffee is purchased directly from the countries where it is grown (above all Central America). Costadoro selects the suppliers from those certified so to give a guarantee of absolute quality.

We basically buy coffee from Brazil, this coffee name is Sanos and it is produced in three areas: Cerrado Mojan and Minasgerais. It grows at a high between 400 and 700 m on sea level. Second place is Guatemala and it is produced in two areas: Atitlan and Coban which are areas called Entre Volcanos because it's a vulcanic area. It grows at a high between 1500 and 1800 m on sea level. Third place is Costarica in the area of Tarrazu, border line between Pacific and Atlantic oceans so that the cultivations can benefit of winds coming from both sides. It grows at a high between 1500 and 1800 m on sea level. Fourth place is Ethiopia in Central Africa from the area of Sidamo. It grows at a high between 1200 and 1500 m on sea level.

Before arriving at the plant, the raw coffee beans undergo special chemical analysis, that prove the quality of the product and the total absence of organic or chemical factors.

When the raw coffee beans arrive at the plant, they are carefully cleaned using special sifting and depulverizing machines. The whole process is fully carried out by an advanced manager computer system, which coordinates all the phases. Tracking of every single operation is guaranteed in any given time.

Step 2: Roasting process

Roasting is carried out rigorously in the traditional way. As a matter of fact to Costadoro only the attentive eye and expert hand of the master coffee roaster can guarantee quality as a result of human expertise, i.e. what makes all the difference a good cup of coffee.

A separate roasting process is used for each type of coffee because beans from different areas require different roasting times and temperatures. Contrary to other firms that roast the coffee when it is already blended, Costadoro has continued this practise to achieve a homogeneous level of roasting, as it can be seen from the uniform colour of beans

Step 3: Selection

election is one of the most delicate phases of the whole process. Costadoro selects all the coffee qualities composing the various blends. A special optical grader electronically operated controls all the beans and rejects all defective ones, namely the beans that are not within the established colour range: all those too dark or too pale are automatically excluded.

Step 4: Blending

A single type of coffee does not make by itself a good cup of espresso. Blending different qualities is therefore one of the most vital phases of the whole production process, since it is the one that gives roasting factories an identity profile and determines a specific image for each one of them.

The doses to be used to make a blend are not constant because of the varying characteristics of the coffees, depending on the batches or the time of the year. The important thing is to achieve the same result.

Step 5: Packing

Costadoro employs two different methods of packing:
Natural atmosphere: untreated bags and tins for the domestic (regional) market where there is no need to preserve coffee because delivery is carried out on a weekly basis.
Protective atmosphere: nitrogen adjusted vacuum atmosphere treated bags and tins for the domestic and foreign market where there is the need to preserve coffee for a long time because it be consumed even after several months.
